Hello Kitty Cupcake Tower

Sofia and Aisha had been asking me to host a party for their friends for quite some time but somehow I could not find the time. A couple of weeks ago I found out that their school was organizing a Quran contest and in order to motivate them to perform well I promised them that if they did well , I shall host a party Insha’ Allah ( if Allah wills) . Alhamdolillah ( all praises to Allah ) , Aisha got second place in the Kindergarten category whereas Sofia was among the finalists in her age group. I told them that winning or losing is ┬ánot important but the fact that they put in a lot of effort called for a party.

Since I just had two days to prepare for the party I decided to get the food catered and make the desserts at home. A kids’ party seems incomplete without cake or cupcakes . Usually I’m all up for making fancy cakes but this time I opted for the easier option – chocolate and vanilla cupcakes with swiss meringue buttercream. Cupcakes also saved me the hassle of cutting and serving cake. My sister in law made edible chocolate filled cups with vanilla pudding.

For the chocolate cupcakes, I used my go – to recipe for chocolate cake / cupcakes which is Hershey’s Perfectly Chocolate Cake recipe. It’s one of the easiest chocolate cake recipes that I have tried and always results in a moist cake . For the vanilla cupcakes, this I tried the recipe from Joy of Baking but felt that perhaps I should stick to my oil based vanilla cupcake recipe.
