I’m on a salad spree these days. I try to have some kind of salad on my dinner table every night.This simple and healthy salad packed with fiber, protein and antioxidants is one that I make quite frequently at home. It goes well with most Indian/Mediterranean dishes.
Healthy Garden Salad
INGREDIENTS:
2 cups lettuce ( Romaine/ Iceberg – torn into bite sized pieces)
Half cup cooked chickpeas (canned/soaked overnight and boiled)
Half cup grape tomatoes (halved)
Half cup English Cucumber ( sliced and quartered)
Half cup red onions ( Peel the onion,cut in half and soak in cold water for about 10-15 minutes to remove the sharp stinging taste, then halve and slice)
For the dressing
1-2 tbsp olive oil ( I use extra virgin olive oil)
1-2 tbsp lemon juice
Dash of salt and pepper
METHOD:
Put the lettuce, chickpeas, tomatoes,onions and cucumbers in a large mixing bowl. Add olive oil, freshly squeezed lemon juice, salt and pepper. Toss well.

colourful looking salad I find this dressing is frequent in our home too 🙂 sometime we replace lemon juice with vinegar
