Pound Cake with Tre Stelle Ricotta Cheese and a Giveaway

When it comes to cheese, Tre Stelle has always been one of my favourite brands. I had some leftover Tre Stelle Ricotta cheese after making my popular Microwave Kalakand ( Indian Milk Fudge). I  tried this Ricotta Cheese Pound Cake and it turned out to quite moist, tender and delicious.
Ricotta Cheese Pound Cake recipe
 For those of you unfamiliar with Ricotta, it has a smooth, creamy texture and a delicate milky aroma. Tre Stelle Ricotta is available in Regular, Smooth and Light versions. However, when it comes to desserts, I prefer full-fat ricotta. Tre Stelle Ricotta cheese is halal-certified by IFANCA. It also bears the kosher symbol.

Ricotta Cheese Pound Cake
Recipe adapted from Laura’s Sweet Spot
Ingredients:
  •  1 1/2 cups cake flour
  •  2 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 3/4 cup (1 1/2 sticks) unsalted butter, at room temperature, plus more to grease the baking pan
  • 1 1/2 cups plus 1 table spoon granulated sugar
  • 1 1/2 cups regular ricotta cheese
  • 3 large eggs, at room temperature
  •  1 orange, zested
  • 1 teaspoon pure vanilla extract
  • 1/2 teaspoon almond extract
Method:
1) Preheat the oven to 350 degrees F. Grease a 9-by-5-by-3-inch loaf pan and line with parchment paper.
2) In a medium bowl, combine the flour, baking powder and salt. Stir to blend.

3) In bowl of electric mixer, measure out sugar and mix in the orange zest . Beat a few seconds with the paddle attachment to combine well.
4) Add butter and beat until fluffy, about 3 minutes on medium speed. Add ricotta and continue to beat, until well incorporated and light, about 2 minutes or so.

5) With the machine running, add the eggs 1 at a time, mixing one full minute after each. Add the vanilla and almond extract until combined.
6) Add the dry ingredients, a small amount at a time and stir gently until just incorporated.
7) Pour the batter into the prepared pan and bake until a toothpick comes out clean and the cake is beginning to pull away from the sides of the pan, about 45 to 50 minutes. Let the cake cool in the pan for 10 minutes then transfer to a wire rack to cool completely.

  1. Just wondering if you eat halal why do you use the extracts (vanilla and any other flavour) since extracts contain ethyl alcohol !!!

Regarding the issue of whether baked goods or other products such as ice creams containing vanilla extract are halal or not, I had discussed this issue with IFANCA which is a leading halal certifying agency in North America since I am not an authority on halal or haram. This is the answer I received:
    “When it comes to consuming any product, it is a personal decision. Everyone has to make up their own mind as to what is permissible and what is not permissible. Of course, not everyone is an expert in fiqh or food science, so we all find ourselves seeking information from authorities in each field. I say information rather than guidance, because we each have to decide for ourselves what is acceptable and what is not acceptable and we must feel at peace with our decision. After consultation with Islamic scholars, understanding the food science, and testing we have concluded that products containing less than 0.1% alcohol that is not sourced from an alcoholic beverage can be certified halal. That is to say, the alcohol cannot be beer, wine, hard liquor, etc. or anything that is a consumable alcoholic beverage. It must be alcohol used in the food industry as a processing aid for technical reasons. At less than 0.1%, our testing has confirmed it is not detectable by sight, smell, or taste and it is not intoxicating in any quantity (i.e., eating 10 gallons of ice cream with less than 0.1% alcohol in it will not intoxicate the consumer). On that basis, a consumer product such as ice cream containing less than 0.1% alcohol used for technical reasons would qualify to be halal certified. Now, the vanilla flavoring, which contains 35% alcohol would not qualify for halal certification but its use in the ice cream or other product does not automatically disqualify the ice cream or other product from being halal certified”. BTW, many vanilla extracts are also being marketed as halal brands these days.
