Gluten Free Baking Products from McCormick Club House

A few years ago when my elder daughter Sofia was put on a gluten-free diet for her eczema, I realized how difficult it can be especially during the holiday season when everyone around seems to be indulging  in their favourite baked goods. Even though she is no longer on a gluten free diet I thought it would be interesting to try out the range of gluten free baking products by McCormick Club House when I was offered the opportunity .

Today, more than 125 years old McCormick Canada is the largest spice, dry sauce and seasoning, extract and specialty food operation in the country. The largest of McCormick's brands is Club House which is now the 54th largest brand in Canada.

Even if you are not on a gluten free diet these products are a great addition to your pantry and can be used in many recipes for gravies, sauces, puddings and baked goods.

As soon as I received my samples, one of the first things that I made from Club House Minute Tapioca was an old favorite of mine - Tapioca Pudding. I grew up eating this simple and comforting dessert back in India where it is known as Sabudana Kheer.  However, there it was made with pearl tapioca which needs to be soaked and takes much longer to cook. My mother's preferred choice of flavor for Tapioca Pudding used to be cardamom and/or saffron but I liked the vanilla version better. Sometimes she also added grated bottle gourd / long squash to the pudding . My Mom didn't add any eggs to the pudding but I followed the Club House recipe which required eggs and I liked the creamier texture that it provided. 


Tapioca Pudding
A Club House recipe
Ingredients:
1/3 cup (75 mL) sugar
3 tbsp (45 mL) Club House Minute Tapioca
1 pinch of salt
1 large egg
3 cups (750 mL) milk
1 ½ tsps (7 mL) Vanilla Extract

Method:
In large, heavy saucepan, whisk together sugar, Club House Minute Tapioca, salt, milk and egg. Let stand 5 minutes.

Slowly bring to a boil over medium heat, whisking constantly, until mixture comes to a full boil (about 17 minutes). Remove from heat and stir in Club House Pure Vanilla Extract.

**Let cool 20 minutes whisking twice. Pudding thickens as it cools. Stir pudding and spoon it into dishes. Serve warm or chilled. Store left over pudding in refrigerator
